Vegetable Lasagna with Pumpkin Sauce
This autumn-tinged recipe of the classic Italian dish is a perfect choice for your potluck, as it brings not only hearty, comforting food to the occasion, but also a taste of the season.

Instructions:
- In a large saucepan, heat the oil over medium heat. Add salt and spices, and cook for 2 minutes, stirring frequently. Add the broth, pumpkin puree, milk, and heavy cream to the saucepan; stir well to combine. Bring to a simmer, and set the sauce aside.
- Simmer a pot of water, and boil the lasagna noodles according to the package directions until al dente. Combine the vegetables in a large bowl, and mix in the sauce.
- Preheat the oven to 400°F. In a 9 x 13-inch baking dish, add a layer of lasagna noodles, a layer of the vegetable mixture, and a layer of cheeses. Repeat until the vegetables and sauce are done.
- Cover the lasagna with aluminum foil, and bake it for 45 minutes, or until the noodles are soft and the vegetables are tender. Remove from the oven, add the cheeses, and bake uncovered for another 15 minutes.
